Chocolate and Lime Cupcakes with Chocolate and Lime Avocado Frosting Fathers Day Cupcakes
These cupcakes are super simple to bake and require just a little bit of chef skill. Chocolate and Lime make a really yummy flavour combination and we think Daddies will love these delicious and healthy treats.

Ingredients for the cupcakes:
50 gs Cocoa Powder
225gs of Flour
1 tsp baking powder
4 Eggs
225gs Sugar
225 gs of Unsalted Butter
The juice of 1 lime
The zest of 1 lime
Ingredients for the lime buttercream icing:
200 gs of Icing sugar
50 gs of Avocado (about half a medium avocado)
50 gs of butter
2 Lime’s finely zested
50 gs of Cocoa Powder
Tsp lime juice
Ingredients for the candied lime zest:
3 Limes for zest
25 gs of sugar
The method for making the Cupcake
Mix the butter and sugar together in a bowl until smooth. Add the four eggs and mix in. Siv in the flour, cocoa powder and baking powder and mix until smooth and then stir through the lime juice and lime zest. If you want to use a food processor you can just add everything together at once. Once the cake batter is smooth, spoon the mixture into your cupcake paper cups and bake for 15-25 minutes at 180 c.
The method for making the candied zest
Cut strips off from your limes and remove any pith. Add these strips to a pan with 500 mls of boiling water and the 20 gs of sugar. Boil down until there is a thin syrup mixture left and lay out the lime zests to dry on a piece of parchment paper.
The method for the Lime buttercream icing
Mash the avocado and add the tsp of Lime juice. Then you can add everything together and mix until smooth using an electric mixer. Wait for the cupcakes to cool and then you can either pipe the icing or use an ice cream scoop and then spin your spoon or spatula pushing your frosting to the edges.
For the decoration just add the candied lime zest!
